FUNCTION:

  • Hi Flex Powder is a non-boiling powder for creme fillings.

FEATURES:

  • Stabilizes the filling, preventing weeping. Holds the water and keeps the filling at uniform volume.
  • Finished filling can be re-whipped and stays smooth and fluffy.
  • Produces non-greasy creme fillings.
  • Can be used with regular shortenings or with emulsified shortenings.

APPLICATION:

  • Use when a creme filling is needed.

USAGE:

One pound of Hi Flex per 100 lbs. of powdered sugar should give desired suitability. If a finer finished product is desired, use 1 ½ to 2 lbs. per 100 lbs. of powdered sugar. It is important that the Hi Flex is blended in with the powdered sugar before any liquid is added to prevent lumping.
